Coconut Cupcake

Who doesn’t love cup cakes? ! I love the tiny little version of a cake :D. I tried this coconut flavored cup cake on my mother-in-law’s birthday with cream cheese frosting. It was super tasty and moist. Let me be honest, I learned this recipe from here. this will make 12 cup cakes.

Ingredients

All purpose flour (Maida) – 1.5 cup (200gm)
Powdered sugar – 1 cup (200 gms)
Desiccated coconut- 1/4 th cup (20 gms)
Baking Powder – 1 tsp
Baking Soda – 1/2 tsp
Vinegar – 1 tsp
Vegetable oil – 60 ml
Vanilla extract – 1 tsp
Coconut Milk – 240 ml

For Frosting

Cream Cheese – 120 gm
Icing sugar – 150 gm
Vanilla extract – 1 tsp
Unsalted butter – 50 gm
Coconut flakes for decoration

Method

In a bowl add 1 1/2 cups of plain flour, 1 tsp of baking powder, 1/2 tsp of baking soda and sieve it together. Add 20gms of Desiccated Coconut and mix it.In a large mixing bowl, add 200gms of Sugar, 60 ml of Vegetable Oil and beat this together

Now add 1 tsp of Vanilla extract, 240 ml of Coconut milk and mix it well. Now mix the wet and dry ingredients together and  add 1 tsp of Vinegar and mix it again.

Preheat the Oven at 180 C/ 355F.
Take an Icecream Scoup or 2 tbsp to fill the Cupcakes
Bake it for 18 to 20 minutes.

For Frosting

Take 50 gms of unsalted butter in a bowl, add 120 gms of Cream cheese, beat this together and now add 150 gms of Icing Sugar and beat it again. Add 1 tsp of Vanilla essence and beat it for 5 minutes. Take out the Cupcakes from the oven and let it cool. Put the Icing in an Icing bag and Ice the Cupcakes.

Decorate the Cupcakes with some desiccated Coconut and some sprinkles.
