Khichdo

Khichdo is a very spicy, nutritious and tasty dish of Gujarat, India. Khichdo includes all kind of lentils, vegetables and spices of your kitchen. I learned this recipe from my mother-in-law. So I decided to teach you this recipe.  Don’t get scared after watching the list of ingredients 😀

Ingredients

For Spicy khichdo:
Mag dal (green gram dal) – 1/2 cup
Tuver dal (Dry pigeon pea) -1/2 cup
Chana dal (chickpea) – 1/2 cup
Rice – 1 1/2 cup
Ghauna Fada (broken wheat) – 3 cup
peanuts – 1 cup
Kharek (dried dates) – 1 cup
Water – 18 cup
Ghee (Clarified butter)/ Oil- 1/2 cup
Mustard seeds – 2 tbsp
Cumin seeds – 2 tbsp
Taj (Cinnamon sticks)
Laving (cloves) – 10 to 12
Elaychi (Whole cardamom) – 7 to 8
Aakhu laal marchu (Dried red chilli) 2 to 3
Tamalpatra (bay leaf)
Limdo (Curry leaves)
Asofoetida – pinch
Ginger-garlic-chilli paste – 1/2 cup
Tuver lilva (green pigeon peas) – 1/2 cup
Valor papdi – 1/2 cup
Vatana (green peas) – 1/2 cup
carrots (chopped) – 1/2 cup
Tomatoes (chopped) – 1/2 cup
Eggplant (chopped) – 1/2 cup
Potatoes (chopped) – 1/2 cup
Sweet potatoes (chopped) – 1/2 cup
Cashews, almonds, pistachio, kismis (dried grapes) – 1 cup
Salt – 1 tbsp
Red chilli powder – 1 tbsp
Turmeric powder – 1 tbsp
Garam masala – 1 tbsp
Sugar – 1 tbsp
Coconut powder – 1/2 cup
Chopped coriander leaves – 1 cup

For sweet khichdo: 

Ghauna Fada (broken wheat) – 1 cup
Water – 3 cups
Kharek (dried dates) – 1/2 cup
Peanuts – 1/2 cup
Ghee (clarified butter) – 1/2 cup
Taj (Cinnamon sticks)
Laving (cloves) – 10 to 12
Sugar – 1 cup
Cardamom powder – 1 tsp
Coconut powder – 1 cup
Cashews, almonds, pistachio, kismis (dried grapes) – 1 cup

Method:

For Spicy khichdo: 
Take 2 pressure cooker. In one cooker put rice and 2 dals. add 9 cups of water. (you will need 3 times water). In another cooker put 3 cups of Fada(broken wheat), 1 cup peanuts, 1 cups kharek and 9 cups of water. Pressure cook both for 3-4 whistles on medium heat.

Take a large pan, put 1/2 cup ghee and/or oil. Add 2 tbsp mustard seeds, 2 tbsp cumin seeds ,taj (Cinnamon sticks),  10 to 12 laving (cloves) ,7 to 8 Elaychi (Whole cardamom), 2 to 3 Aakhu laal marchu (Dried red chilli) ,Tamalpatra (bay leaf), Limdo (Curry leaves), Asofoetida – pinch and  1/2 cup Ginger-garlic-chilli paste.

Now this is the time to add vegetables. Firstly add all green vegetables like  1/2 cup Tuver lilva (green pigeon peas), 1/2 cup Valor papdi and 1/2 cup Vatana (green peas). Cook it properly.

Add 1/2 cup carrots (chopped), 1/2 cup Tomatoes (chopped), 1/2 cup Eggplant (chopped), 1/2 cup Potatoes (chopped) and 1/2 cup Sweet potatoes (chopped). Cook it until all the vegetables becomes soft.

Time to add dryfruits and cooked lentils . Add 1 cup cashews, almonds, pistachio, kismis (dried grapes) . Cook it well for 2-3 minutes and add cooked rice,lenthil and fada (broken wheat).

Time to add dry spices. Add tbsp salt,  1 tbsp red chilli powder, 1 tbsp turmeric powder, 1 tbsp garam masala , 1 tbsp sugar. Mix very well. If the mixture is dry then you can add water and adjust the consistency.
And at then end add chopped coriander leaves and coconut powder for garnish.

And delicious, spicy khichdo is ready to be served! 🙂

For Sweet khichdo:
Pressure cook 1 cup of Fada(broken wheat), 1/2 cup peanuts, 1/2 cups kharek with 3 cups of water for 3-4 whistles on medium heat.
Take a 1/2 cup ghee in a pan. Add Taj (Cinnamon sticks) and 10 to 12 Laving (cloves) and cook it for 2-3 minutes. Add 1 cup of cashews, almonds, pistachio, kismis (dried grapes). Once the dryfruits get brown color. Add cooked broken wheat and 1 cup of sugar. Mix everything well.

Add 2 tsp cardamom powder and 1 cup of coconut powder. Cook it for 7-8 minutes. Keep stirring and turn off the flame.

And sweet khichdo is ready! 🙂
