Halwasan is a very famous gujarati sweet dish of Khambhat. I tried this recipe few days back and it turned out good. So, I am sharing it with you!

Halvasan (1)


Milk – 2 liters
Edible gum (Gundar) (powdered) – 100 gm
Sugar – 2 cups
Whole wheat powder (Bhakhri Flour) – 5 tbsp
Ghee ( Clarified butter) – 5 tbsp
Cardamom powder – 1 tsp
Nutmeg powder – 1 tsp
Saffron – Few
badam/pistachio slivers and dried honey dew seeds (Magajtarina bi) – for garnishing


In a deep pan, heat 2 liters of milk to boil.Mean while, heat 5 tbsp ghee in a broad pan, and add 5 tbsp whole wheat powder(Bhakhri flour) and saute till it turns pink. Add 100 gm of edible gum into it and cook it for 2-3 minutes. 

Now add the edible gum,flour and ghee mixture into the milk and allow it to curdle. Take another small pan and put 2 cup of sugar to cook.  Fry till sugar caramelizes. Once the sugar is ready, add it into milk mixture.

Stir very well continuously till it becomes very thick. Remove from the flame and add 1 tsp cardamom powder, 1 tsp nutmeg powder and some saffron and mix well.

Make balls of this and roll on badam/pistachio slivers, dried honey dew seeds and serve!
