For the cake:
Plain flour – 200 gm
Cocoa Powder- 50 gm
Powdered sugar – 30 gm
Baking powder – 2 tsp
Baking Soda – 1 tsp
Sweetened condensed milk – 400 gm
Melted Butter – 150 gm
Vanilla essence – 1 tbsp
Water – 250 ml
For the syrup:
Water – 1 cup
Strawberries / Cherries (chopped) – 1 cup
Sugar – 1/4 cup
For the icing:
Heavy whipping cream – 500 ml
Powdered Sugar – 1 cup
chocolate shavings and dried cherries for decoration
Grease the 8 inch round cake tin with butter and flour and keep it ready. Preheat the oven at about 150 c/300F.
In a large mixing bowl, Sieve 200 gm flour, 50 gm cocoa powder, 30 gm powdered sugar, 2 tsp baking powder and 1 tsp baking soda, and mix everything well.
In another bowl, Add 400 ml condensed milk, 150 gm melted butter, 1 tbsp vanilla essence and 250 ml. Add the flour mixture into it. Beat with an electric hand mixer, stand mixer, whisk or spoon just until the mixture is uniform and smooth and there are no lumps.
Pour the batter into cake tin and bake for 40-45 minutes or until a skewer or toothpick comes out clean.
After the cake is done, allow it to cool down for 3 to 4 minutes and then invert it on to a cooling rack. Cut the cake horizontally with a large knife.
For the syrup
When the cake is baking, make the syrup. You can use cherries/Strawberries. In a small pan, you need to put in 1 cup water,1/4 cup sugar and 1 cup of cherries/Strawberries. You have to heat this until the sugar dissolves and begins to boil. After the syrup boils for 2 to 3 minutes, turn off the heat and allow to cool.
Put mixing bowl and hand mixer tools/whisk in freezer for 10 minutes. This will help to keep whipping frosting cool and firm while making it. Take 500 ml heavy whipping cream in a mixing bowl.If you are using a hand mixer then start whisking it on medium speed for 3 minutes or until u get thick and firm cream. (If you are using hand whisk then you need to whisk it for 10 minutes very fast) whip the cream until soft peaks form.Add 1 cup powdered sugar and 1 tsp vanilla extract. And frosting is ready. Use this frosting immediately.
Place one half of the cake over a serving plate. Put some syrup all over it. Spread cherries/Strawberries and the whipped cream. Carefully place the other half of the cake and moisten it with the syrup. Spread the whipped cream on top of the cake and cover it over the sides as well. With the help of a cone and an icing nozzle place stars or rosettes on the edges of the cake. To make it prettier, place a cherry on the top of each design.
With the help of a vegetable peeler, peel a bar of chocolate to get chocolate curls. Place some chocolate curls in the center of the cake. Place some mini chocolate curls on the sides of the cake as well .Put dried cherries on the top. Chill in the refrigerator for about 2 to 3 hours before slicing.
