Ragda is a preparation made from dried peas and used in chaat items like Sev usad, Pani Puri, Ragda Puri, Ragda Pattice, Dahi Ragda Puri or Ragda Chaat.

Ingredients 

Green dried peas – 2 cups
Oil – 3 tbsp
Mustard seeds – 1 tbsp
Cumin seeds – 1 tbsp
Curry leaves – 10 to 12
Asafoetida – pinch
Onion – 2 medium (finely chopped)
Garam masala – 1 tbsp
Sugar – 1 tbsp
Tomato – 2 medium (finely chopped)
Green chillies – 2 small (chopped)
Ginger-garlic paste – 1 tbsp
Red chilli powder – 2 tbsp
Turmeric powder – 1 tbsp
Coriander-cumin powder – 1 tbsp
Salt – 1/2 tbsp
Lemon juice – 1/2 lemon
Water – 1 cup
Coriander leaves – 1/2 cup (chopped)

Method

Soak the 2 cup dried peas for 5-6 hours in 3 cups of water. Drain, add approximately 3 to 4 cups of fresh water and pressure cook for 4 whistles or until the peas are soft. Take a big pan, heat 3 tbsp oil, add 1 tbsp mustard seeds, 10 to 12 curry leaves, 1 tbsp cumin seeds  and asafoetida and stirring till the seeds crackle. Add chopped onions and cook till it becomes golden brown. Add 1 tbsp sugar and 1 tbsp garam masala. Cook it for 2-3 minutes.

Add finely chopped tomatoes, chopped green chillies, 1 tbsp ginger-garlic paste. Cook it for 5-10 minutes. Add all the dry ingredients like 2 tbsp red chilli powder, 1 tbsp turmeric powder, 1 tbsp coriander-cumin powder and 1/2 tbsp salt.

Add boiled peas, 1 cup water, half lemon juice and few chopped coriander leaves. Cook it for 5-10 minutes.

Serve it hot with sev, onion, green chutney and date-tamarind chutney! 🙂
