Badam-Sing pak is very quick, easy and healthy sweet. One can add any kind of nuts to prepare this dish.
Preparation time: 5 minutes
Cooking time: 20 minutes
Roasted peanutes – 1 cup
Almonds – 1 cup
Cashews – 1/2 cup
Ghee/ Clarified butter – 1.5 cup
Jaggery – 1 cup
Cardamom powder – 1 tsp
Dry ginger powder (સૂંઠ) – 1/2 tbsp
Ganthoda powder – 1/2 tbsp
Roast peanuts lightly for 5 minutes. Cool and remove skin. Grind to a coarse powder. Roast almonds and cashews, grind it to a coarse powder as well. Keep everything ready.
Take the 1.5 cup ghee in a pan. Once ghee is melted add 1 cup jaggery and cook this for 2-3 minutes till the jaggery melts. Quickly add ground peanuts,almonds and cashews and cook till the mixture thickens, stirring continuously at frequent intervals.
Add 1/2 tbsp cardamom powder, 1/2 tbsp dry ginger powder, 1/2 tbsp ganthoda powder and mix well.Spread onto the greased thali and smoothen the surface. When slightly cooled, cut into squares and store.
