Ingredients

Wheat flour – 2 cups
Gram flour (besan) – 1/2 cup
Grated bottle gourd (dudhi- grated) – 1 medium
Coriander & cumin seed powder – 1 tbsp
Red chilli powder – 1 tbsp
Turmeric powder – 2 tsp
Sugar – 1 tbsp
Salt – 2 tsp
Garlic-ginger-green chilli paste – 3 tbsp
Baking soda – 1 tsp
Lemon juice – 1 tbsp
Oil – 2 tbsp + 3 tbsp
Coriander leaves – 1/2 cup
Mustard Seeds – 1 tbsp
Sesame Seeds – 1 tbsp
Curry leaves – 10 to 15 leaves
Coconut powder (optional) – 1/2 cup

Method

Boil a pot of water and over it place the greased sieve on the top and cover it with a lid.

In a bowl mix together 2 cups wheat flour, 1/2 cup gram flour, 1 tbsp coriander & cumin seed powder, 1 tbsp red chilli powder, 2 tsp turmeric powder, 1 tbsp sugar, 3 tbsp garlic-ginger-chilli paste, 2 tbsp oil and 2 tsp salt.

Add 1 tsp baking soda, 1 tbsp lemon juice, 1/2 cup coriander leaves. Mix everything well and add  grated grated bottle gourd ( lauki ). (Don’t add any water)

Apply oil to your palm and make cylindrical roll of the dough and place it on the steamer and let it steam for 20 -25 minutes.Let them cool down completely and them chop them into thin slices.

Heat 3 tbsp oil, add 1 tbsp mustard seeds, 1 tbsp sesame seeds , 10 to 15 curry leaves and add the muthia’s and toss them up. Let them cook for 3-4 minutes Garnish with coriander leaves and coconut powder.

And Dudhi-Muthia is ready to be served!
