Soji (Semolina) – 1 cup
Ghee ( clarified butter) – 1 cup
Milk (warm)– 3.5 cups (full fat milk)
Sugar – 1 cup
Cardamom powder – 1 tsp
kismis (dried grapes -raisins) – 1 tbsp
cashew-almond (shredded) – 1 tbsp
Heat the 1 cup ghee in a pan on medium heat.Once hot add 1 cup soji. keep cooking with constantly stirring till it gets slightly brown in color. It will take about 12-15 minutes.
Once flour is roasted, add the 3.5 cups warm milk. Stir it very quickly.
Add 1 cup sugar, 1 tsp cardamom powder, 1 tbsp dryfruits, 1 tbsp kismis and stir it continuously. once all the milk is absorbed, you will notice the change in the texture. the ghee also will be visible at the sides.
Turn off the heat and your soji shiro is ready to be served!! 🙂
