Mixed dal handvo is a traditional gujarati spicy cake.

Soaking and fermenting time: 5 hours + 8 hours

Rice – 1 cup
Tuvar Dal (Arhar dal) – 1/2 cup
Chana Dal (Split bengal gram) – 1/4th cup
Green Moong Dal (split green gram)- 1/8 cup
Urad Dal (Split black lenthil) – 1/8 cup
Sour Curd (khattu Dahi) – 1/2 cup
Ginger-Garlic- Chilli paste – 2 tbsp
Peanuts (sing) – 15-20
Bottle gourd (dudhi)(Grated) – 2 cups
Turmeric Powder – 1/2 tbsp
Red chili powder – 1 tbsp
coriander-cumin seed powder – 1 tbsp
Jaggery – 2 tbsp
Sesame Seeds – 1 tbsp
Salt – 2 tsp
Baking soda – 1/4 tsp
Oil – 4 tbsp
Mustard Seeds (rai) – 1 tbsp
Sesame seeds (tal) – 1 tbsp
Curry leaves – 10-12
Asafoetida – 1/4 tsp
Clean, wash and soak all the dals and rice in 5 cups of water for atleast 4 to 5 hours. Drain and keep aside. Add curd and blend the dals and rice in a mixer to a smooth mixture.Cover and keep aside to ferment overnight in warm place. (Note: I have kept it in oven and kept oven light ON)
Add the bottle gourd, jaggery, chilli powder, turmeric powder, coriander-cumin seed powder, sesame seeds,peanuts, garlic-ginger-green chilli paste and salt and mix well. Add baking soda at the end.
Mix it well an pour the batter evenly to make a thick layer in a pan. In another small pan heat oil and add the mustard seeds.When the seeds crackle, add the sesame seeds, curry leaves and asafoetida and sauté on a medium flame for a few seconds.Pour it on the top of the batter. and place it in oven.
Bake it for 40 minutes on 350ºF/180ºC . Then put it on broil for 10 minutes on highest temperature.
( Note: You can cook it in handva cooker also. for that cook it for 40 minutes until you get golden brown crust in top.
For mini handvo (Dangela) – Divide the same mixture into 4 equal portions and pour each portion into a small non-stick pan and spread it evenly to make a thin layer. Cover and cook on a slow flame till both sides turn golden brown in color and crisp.)

(NOTE: I tried different variation also. You can add different vegetables in it. I added 1 cup – fenugreek leaves (methi), 1/2 cup Corn ,1 cup bottle gaurd (dudhi) and 1/2 cup onion. Rest of the ingredients and procedure are same. )
